In your dashboard, if you have 20 portfolio items spread across 10 categories, adjusting the 'posts per page' setting to 12 and selecting the 'order by date' option in the Product widget will showcase only the latest 10 products. However, if these latest 12 portfolios belong to only 2 categories, the filters will reflect only those two categories. This is how the filters in the portfolio widget operate.
To display all categories in the filter, you'll need to intermix the latest 12 portfolios in the dashboard. Doing so will ensure that products from all categories are included in the display, allowing the filter to showcase all available categories.
