I've removed that code customization that I've made because I found an error in the theme code that was hiding the option to change the "Back to Shop" at Appearance > Customize.
So now all you need to do is to go to Appearance > Customize > Shop > Product > Back URL and from there you can change the "Back to Shop" string and the URL of the button.
