About the filters, please make sure that you've assigned portfolio items to the categories, then go on the page that you're displaying the portfolios, edit it and at the portfolio element, click on "build query" and you will be able to select the categories that you want to get posts from, also make sure that you click on the sortable option.

Can you please install a fresh copy of the Proton Theme, it seems that the theme is not working properly, because we've just tested it on our test site and this is working alright, have you customized any part of the theme code or anything that could cause an error in the site?

There are two options oh how we can set this up.
1) If you select the portfolio template then you have to select the portfolio categories at Portfolio Options > Category.
