I've looked everywhere and cant figure out why youtube videos are embedding square on my blog posts? I am not using elementor for blog posts, just classic editor. I've looked in the CSS but cant find where or why the iframe has a crazy aspect ratio. In mobile it looks even worse. Its just really long and cropped.
Wondered if it was something in the bifrost theme css?

Yeah adding it manually like that it will work, I just dont understand why it isnt automatically responsive if the theme itself is responsive?

Unfortunately, that's how it works in the classic editor, we can't add further tags into it, since we use Elementor for our content.
