4. But what about the "transactional" pages? when I tried to open checkout page with elementor I'm getting "the_content" error... So thats what I think is better via css?
As I've told you before, if you want to assign a page as a Shop Page, you need to create a blank page that is not affected anything with Elementor, and you can go to Appearance > Customize > Shop and there are some changes that you can make for that page.

1) Please go to Appearance > Customize > Styles, and you can change the main color there.
