We're sorry but when you assign a page as Shop Page in Woocommerce you can't edit that page with Elementor this is also for Category Pages which can't be edited with Elementor. The only options are at Appearance > Customize > Shop.
And if there's something that you want to change in style please tell us and we will provide you with some CSS code.
