Hello Neuron! I have a new question. Now that my support time is running out, problems arise. I hope to solve all of them before it ends.
When I choose a blog page in theme settings it isn't the page designed in elementor.
One option is to configure the blog on the page with elementor. Another option is the blog tab in the theme configuration, which it will follow if I choose any blog page in the home page settings, but no the configuration of the page created.
And... if I don't put a category, the post doesn't appear. Is it correct?
In short, I don't understand very well the criteria that follows for the pages of blog.
I think you shouldn't pay much attention to the blog tab of the theme settings. Is that so? I don't know if I have explained it very well, I hope so. I hope you can clarify this doubt. Thank you. Cheers.

Yes, there are two ways to construct a blog page, by Elementor and by choosing the blog page in Settings > Reading. I would suggest you to keep the page created with Elementor, in that way you'll have more flexibility.
By inserting a Blog and not selecting anything to the query, that will automatically grab all the published posts. So that will become an archive. If that's what you're looking to achieve.
