Well, there are three types of Portfolio Item, as you can see in the portfolio item settings.
Side Portfolio
Vertical Portfolio
Elementor
So the Side and Vertical Potfolio are created through options which appears below the content of the portfolio item and if you want fully control over the layout you can choose the Elementor type, so the page content will set blank and it will have only header and footer.
Make sure also to allow Elementor on Portfolio Items.
You need to go at Appearance > Customize > Header > Layout and select the type template, after that a new field will appear below where you can select the template(header), that header will appear on all pages and posts.
I am very frustrated with portfolio pages. Is there an option to design/place text, images with elementor tool?
In edit mode I cannot understand how to fill up the settings so I would get desired layout. For example: side portfolio v8.

I went to portfolio edit page -> settings -> header -> visibility show. But the header is different? dot to set particular template header?
