Unfortunately sorting works only for the posts that are already loaded not for those that are not loaded. You need to click show more then to use the filters.

I am not quite understanding your question.

The post per page option can be changed to any number which will represent the number of the posts on that page, so if the number is 10 and you have 15 posts, 5 other posts will be left on page 2, which you can show via the pagination with numbers or via the show more button.

To change to show more button you can use the option in style.
