My version (https://timepact.co/testcalendar/) interprets a lot of the styling (buttons and text) in a different way. Instead of changing everything individually I wonder if there's a way to bypass the theme's styling and just use the plugin's styling.

Unfortunately, that is not part of our support, since I don't know how the plugin is built, we add some styling for tables and other HTML stuff that's why it is overriding the getbooked plugin CSS, please ask the author of the plugin, he/she may direct you in the right path for that, maybe calling the plugin CSS last could make it perform better.

Enjoying the theme and Elementor so far!
I've got a question that's maybe out of the scope of your service, but I can't figure out the best way to do this.
I want to use the default plugin styling instead of the theme styling for the getbooked plugin. You can see the demo here:
