It seems like you have change the portfolio prefix, right after doing that you need to click Save changes on the Settings > Permalinks to flush the permalinks.

When I try to load Elementor on a Portfolio page, I get the error in the attachment.
Side question: What to I have to add to the theme functions file to get the Gutenberg editor to work on Portfolio pages?

That could be the case, because of that element that is built on Elementor.
Maybe removing the content again completely from the normal editor and start adding it again will fix it?
