How would I go about changing the default header image to something else? Also, how do I upload page templates and edit them with elementor? Is any of this information covered in your documentation.
You can change the header image for all posts and pages to Appearance > Customize > Utility > Hero, this covers all the post and pages, except those that doesn't inherit the values and the options are set individually for pages.
As for the templates, I would suggest you to go with the One Click Demo Importer, it will import everything that is listed in our demo, so you can simply start removing what you don't need. The one click demo importer is located at Appearance > One Click Demo Import.
